Quick Question, the phrase "Você parece inglês. De onde você é?" is translated to "You sound British. Where are you from?" Wouldn't it be more accurate for the phrase to be translated to "You sound English" instead since it refers to the nationality?

Yes! There are more than 2 ways of saying goodbye in Portuguese.
Adeus is more formal.
Tchau, Até logo, Até mais, are more informal.
